"West Indian cuisine"

Caribbean cuisine and their way of life, has been influenced by different cultures of the world. Caribbean cuisine is a fusion of West African, Creole, Amerindian, European, Latin American, Indian/South Asian, Middle Eastern, and Chinese. Traditions were brought from many countries when they moved to the Caribbean, creating styles that are unique to the region. 

Arawak & Carib Indians: The first inhabitants of the islands – with the knowledge to cultivate and produce a sustainable lifestyle; strong understanding of complex ingredients; creative mixtures of sauces and marinades; using innovative methods to enhance flavors.

England (Great Britain): Early explorers whose influence helped to create and shape the Caribbean by introducing their way of life and culinary experience to the native people. Fish & chips – a must have…crispy golden delicious fish, battered and fried to perfection.

Spain: Introduced a variety of fruits and a blend of aromatic flavor and spices. The cooking technique from Spain has its strongest influence in the Greater Antilles. A delicious fusion of flavors to create favorites like paella – which is consider traditional and very much part of Caribbean culture.

Africa: Hunter in their homeland, with a creative flair to transform leftovers into something magical, by using natural ingredients to cure and preserve meats – an infusion of fiery foods and flavors, with secrets to slow cooked meats – a process used to enhance flavor. After slavery was abolished more styles were introduced.

China: The introduction of rice, which is always a staple in home-cooked island meals. Master of everything seafood – with a diverse approach to creativity in the kitchen – with a flair for the spectacular! The Chinese also introduce mustard, as well as a variety of exotic fruits and flavors.

India: Exotic spices grounded to produce vibrant, colorful and tasty aromatic flavors – Indian culture is alive and well with pungent flavors such as curried meats and vegetables (curry powder mixture of spices that includes turmeric and other dried spices).

The Americas/Latin America: An introduction of starchy food items, such as but not limited to potatoes, tomatoes and legumes.

Caribbean flavors includes but not limited to: limes, oranges, ginger, pineapple, banana, mangoes, plantain, sugar cane, tamarind, coconut, breadfruit, ackee, pimento, turmeric, onion, thyme and the list goes on.

Every Caribbean island has its own signature dishes, unique blend of ingredients, formulated with rich flavors,by using different seasonings and cooking techniques. With Jamaica being famous for its fiery and flavorful creation, “Jerk” that can be used on chicken, pork and other meats and vegetables”.
